Lemon & Lime Souffle
LEMON & LIME SOUFFLE


Serves 4
Preparation time – 20 minutes
Cooking time - 40 minutes

Ingredients
1 lemon (organic)
1 lime (organic)
250ml semi skimmed milk
150g caster sugar
4 eggs + 1 egg white
3 tablespoons cornflour
20g butter + 15g to grease dish
    How to Make it
  1. Preheat oven to 350°F (180°C).
  2. Finely grate the zest from the fruit and squeeze.
  3. Gently bring milk to the boil, adding caster sugar.
  4. Separate eggs.
  5. Mix cornflour with 4 tablespoons lemon and lime juice, add to milk.
  6. Thicken over a low heat.
  7. remove from hob, add butter and egg yolks. Leave to cool.
  8. Beat egg white until stiff and add mixture.
  9. Grease an oven-safe soufflé dish and pour the mixture in, until two thirds full.
  10. Place on middle shelf of oven and bake for 30 to 40 minutes, until soufflé has risen.
  11. Decorate with zest and serve immediately.
