LEMON & LIME SOUFFLE

250ml semi skimmed milk
150g caster sugar
4 eggs + 1 egg white
3 tablespoons cornflour
20g butter + 15g to grease dish

- How to Make it
- Preheat oven to 350°F (180°C).
- Finely grate the zest from the fruit and squeeze.
- Gently bring milk to the boil, adding caster sugar.
- Separate eggs.
- Mix cornflour with 4 tablespoons lemon and lime juice, add to milk.
- Thicken over a low heat.
- remove from hob, add butter and egg yolks. Leave to cool.
- Beat egg white until stiff and add mixture.
- Grease an oven-safe soufflé dish and pour the mixture in, until two thirds full.
- Place on middle shelf of oven and bake for 30 to 40 minutes, until soufflé has risen.
- Decorate with zest and serve immediately.
